Step 1

1. First of all, prepare the caramel sauce. Combine sugar and water in a small saucepan and place over heat. Keep on low heat at first, until the sugar dissolves completely. Then increase the heat to maximum and let the sauce acquire a nice brownish color. Do not stir the caramel at any point during this process!

2. Remove from heat and slowly pour in the pre-warmed cream in a thin stream (be very careful, as the caramel may splatter). The more cream you add, the thinner the sauce will be. Vanilla is used for flavor in this recipe; you can also add a pinch of cinnamon to the sauce.

Step 3

3. All that's left is to add the butter. Carefully mix it with the other sauce ingredients. Use a spatula to turn it into a smooth, uniform mixture.

Step 4

4. Wash, dry, and slice the pears thinly. Place the caramel at the bottom of a heatproof dish and spread the fruit in an even layer. Arrange the pear slices neatly in a circular pattern.

Step 5

5. Now you can start preparing the dough. Sift flour with cocoa, baking powder, and salt into a deep bowl. Separately, beat butter with sugar, then add egg and vanilla extract. Melt chocolate in a water bath.

Step 6

6. Combine all the ingredients, pour in the milk, and beat until smooth. Spread the prepared batter evenly over the pears. Smooth the surface with a spatula.

Step 8

8. Let the baked goods cool. Then carefully turn the cake over and serve, dividing into portions. It goes perfectly with ice cream and whipped cream.
