
Pear pie with pastry cream
Description
The pastry is simple and quick to make. A pear pie with custard is easy to make and relatively fast. It doesn’t call for special cooking skills. If you follow the step-by-step instructions, you can bake it without any trouble whenever you like. A tender, tasty, even refined pie with little dough and plenty of cream will work for a festive table as well. The pastry is done. Serve it at the table.

Prepare the ingredients for making a pear pie.

Place soft butter in a bowl.

Add sugar.

Add one raw egg. Mix with the butter and sugar. You don’t need to get a smooth, uniform mixture.

Add baking powder and flour.

Knead a soft dough that doesn’t stick to your hands.

Roll out the dough on a floured surface and place it in the tin. My tin is 22 centimetres in diameter. Put the tin with the dough in the fridge.

Meanwhile, prepare the custard. Put two egg yolks in a small bowl and add 3 tablespoons of sugar. Mix thoroughly.

Add 2 tablespoons of corn starch and 3 tablespoons of cold milk. Mix everything well again. There must be no lumps.

In a heavy-bottomed saucepan pour in the milk and heat until almost boiling. Add the mixture of egg yolks, sugar, and starch to the hot milk. Stirring constantly, cook the cream until it thickens. This will take a few minutes. Then add vanilla sugar to the cream. Cool the cream to room temperature.

Spread the cooled pastry cream into the tin lined with the dough. Wash the pears, slice them thinly, and arrange the slices over the cream.

Bake the pie in an oven preheated to 175–180°C for 30–35 minutes. It may take more or less time, depending on your oven.
