
Chocolate Pear Pie
Description
The pastry is simple and quick to prepare. The pear and chocolate pie is perfect for a family tea time. Serve it dusted with powdered sugar and cut into portion slices. Be sure to use only high-quality chocolate! Poor-quality chocolate can ruin the dish. In this recipe, white muscat wine can easily be replaced with pink dessert wine. The pastry is ready. Serve at the table.

1. Wash and peel the pears, remove the cores, and cut the fruit into large slices. Place the slices into a deep frying pan or saucepan, pour wine over them. Cook over high heat until all the liquid has evaporated. Immediately after that, transfer the pears onto a plate to cool.

2. Melt the chocolate in a water bath, add 100 g of butter, and mix well. Let it cool slightly.

3. Separate the eggs into yolks and whites. Set the whites aside (preferably place them in the refrigerator). Beat the yolks with the remaining butter and half the sugar until the mixture doubles in volume. Mix it with the chocolate mixture.

4. Then add the sifted flour mixed with baking powder in portions. The mixture should become quite thick.

5. Now beat the egg whites with the remaining sugar until stiff peaks form. Add them to the batter in three stages, gently folding with side-to-side or bottom-up motions. The result should be a smooth, fluffy chocolate mixture.

6. Take a pan with a diameter of 21–23 cm, grease it with oil and dust with flour. Place half of the dough into it, smooth it out with a spatula or spoon. Arrange the pear slices in a circle on top. Then spread the remaining dough over the pears. Smooth the surface.

7. Bake the pear and chocolate pie in a preheated oven at 180 °C for about 50 minutes. Let it cool slightly in the pan (15–20 minutes). Then remove the pie from the pan and let it cool completely. Done!
