Pear pie with rosemary

Description

The recipe won't take much time. Whenever my nephews visit me, they know they'll be treated to delicious homemade sweets. And each time, I try to surprise them with something new. Not long ago, I made an incredibly tasty pie. I thought they wouldn't like it because it contains rosemary—a spice not typically used in sweet baking. But when not even a crumb was left, I was pleasantly surprised. The recipe for pear pie with rosemary is simple and easy to prepare. Serve it with tea or coffee.

    Grate the hard cheese on a fine grater and mix with the sifted flour and softened butter at room temperature. Knead the dough, wrap it in plastic wrap, and refrigerate for 1 hour.

    Roll out the rested dough to a thickness of about 3 mm and carefully place it into the pan. Trim the excess dough from the edges. Cover the pan with parchment paper and bake in a preheated oven at 180°C for 10 minutes. Then remove the paper and return the pie crust to the oven for another 10 minutes.

    Peel the pears, cut them into wedges, and place in a saucepan. Add butter (10–15 g), sugar (10 g), lemon zest and juice, and finely chopped rosemary. Cook the pears over high heat for 5 minutes, stirring occasionally, then let cool.

    Prepare the cream: beat the butter with sugar and egg. Then add almond flour and gently mix with a spatula.

    We place the cream on the cooled dough, then arrange the stewed pears (without syrup) on top. Bake in a preheated oven at 180 degrees for 25-30 minutes.

    The juice left after the pears should be thickened over high heat into a syrup, which we will then use to glaze the finished pie.
