Step 1

Peel the pears, cut them in half; if they are very large, cut into 3-4 pieces. Remove the core and make several shallow cuts on the pears.
- 2
Step 2

Pour boiling water over the almonds and let them sit for 8–10 minutes, then peel off the skins.
- 3
Step 3

Place the pears in a small container, pour lemon juice over them, add sugar and water. Boil for about 10-15 minutes, depending on the ripeness of the pears. They should not become too soft. Then transfer them to a colander and let the syrup drain off.

Step 4

Grind the peeled almonds into crumbs.

Step 5

Prepare the dough. Mix one-third of the ground almonds with flour and sugar. Take the butter out of the freezer and grate finely on a coarse grater. Quickly mix and add the egg. If the dough does not come together into a ball, add a little sour cream. Refrigerate the dough for 30 minutes.

Step 6

Beat the soft butter with sugar, then add the eggs one at a time, beating well after each addition. Add the almonds mixed with flour, along with rum or brandy. Mix thoroughly.

Step 7

Roll out the dough into a sheet and place it in a pan, forming the edges. Alternatively, press the dough into the pan with your hands. Add the cream filling and pears.

Step 8

Bake the pie in the oven at 200 degrees for about 40 minutes. Boil the syrup from pears until it evaporates and thickens. Brush the hot pie with the pear syrup.
