
Pear pie
Description
The recipe won't take much time. The pie is easy and quick to prepare. The main thing is not to overwork the dough. A little carelessness and lightness will only benefit the pie. It can be served with tea or coffee.

Prepare the ingredients.

Preheat the oven to 170 degrees. Beat the butter with sugar until pale and fluffy.

Add one large egg and beat well again.

Mix the flour with baking powder and add it to the butter mixture. Gently stir until a crumbly dough forms. Do not overmix the dough completely; the quicker you mix, the more tender the base will be.

Place the dough in a mold, preferably silicone or a good non-stick one.

Bake the dough for about 12-15 minutes, until lightly golden.

Meanwhile, beat the ricotta with the remaining sugar and the second egg until smooth.

Cut the pears in half and use a melon baller to remove the seeds. This should leave round hollows.

Remove the slightly baked base and let it cool slightly. Spread the ricotta on top.

Place the pears on top of the ricotta. Fill the hollows of the pears with brown sugar. Sprinkle the remaining sugar over the top of the pie.

Return the pie to the oven and bake until done. The edges of the pie will pull away from the pan, the sugar in the pears will melt, and the pie will turn slightly golden.
