Description

A delicious appetizer for any gathering. A very piquant, light, and unusual dish. A delicate paste of pear, nuts, and blue cheese can be used for sandwiches, but I prefer to serve it as a salad. The main secret is that the pears should be at that stage of ripeness when they are no longer astringent, but have not yet become too soft or, heaven forbid, mushy. In short, they should be good ones. Any cheese from the noble family of blue-veined cheeses will do—as long as it is not past its date. I usually make it with the most budget-friendly one—Dor Blue. So, here is the recipe for pear with blue cheese. Wash the pears and pat them dry with a towel. Set aside 1 pear—it will be used for garnish. Remove the core from the second and cut it into irregular pieces. Coarsely chop the nuts (leave a few for garnish) and toast them on a very hot dry skillet for several minutes. Do not forget to stir constantly! Crumble the cheese directly into the blender bowl. Add the pears and nuts there as well. Add a spoonful of olive oil. Blend the contents of the bowl until creamy. Using a special mold, shape it onto a flat plate. Slice the remaining pear into very thin slices and use them to garnish the salad. Scatter walnut halves and pieces of cheese around. And that is all—now you know. Serve the appetizer at the table.
