
Sourdough grissini
Description
Goes perfectly with tea and coffee. This recipe is ideal for using up leftover sourdough starter. Experiment with flavour add-ins, and mix different types of flour. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for making grissini. You will need 200 grams of active sourdough starter; prepare it in advance. To 50 grams of starter, add 50 millilitres of water and 100 grams of wheat flour. Knead into a firm ball of dough and place it in a jar, covered with cling film. Leave the starter to mature. Depending on the ambient temperature, the starter will be ready in 6–12 hours.

Pour cold water into the bowl for making the dough and stir in the prepared starter.

The mixture should be the consistency of liquid sour cream.

Add the seasonings of your choice to the resulting mixture. These can be poppy seeds, flax seeds, sesame seeds, dried garlic, aromatic herbs, or cheese.

Add olive oil to the dough and mix the mixture.

Combine the salt, high-grade wheat flour, and whole wheat flour. Mix and add to the liquid base of the dough.

Knead the dough in a bowl so that all the moisture is absorbed into the flour. Let the dough rest for 10 minutes, covering the bowl with a kitchen towel.

Transfer the dough to the countertop and continue kneading. The finished dough should be elastic, soft, and slightly sticky. Divide the dough into portions; each piece should weigh about 25 grams.

Roll each piece into a long thin stick. Adjust the size and thickness of the grissini as you like. Arrange the grissini on a baking sheet lined with parchment paper.

Before baking, brush the shaped pieces with an emulsion of olive oil mixed with water. If desired, you can also sprinkle the grissini with cheese, sea salt, etc. Bake the grissini in an oven preheated to 200°C for 20–25 minutes.
