Description

This recipe won't take much time. Grillage (from French "grillage") is a French treat made of roasted nuts with sugar. Grillage is an excellent homemade dessert for holidays and everyday enjoyment. There are various types of grillage, but two main varieties can be distinguished—hard and soft grillage. Soft grillage consists of ground nuts combined with fruit puree, while hard grillage is a mixture of melted sugar and roasted nuts. Grillage is a great alternative to candies, caramels, and other confectionery items, requiring only a few ingredients. Store grillage between layers of waxed paper. It can be enjoyed on its own, served with ice cream, or used as a layer between two slabs of parfait. Be careful when pouring the hot sugar mixture onto the baking sheet to avoid burns. The color of the sugar mixture (not temperature) is the best indicator of readiness. The darker the color, the more bitter the grillage will be. Try to remove the mixture from heat when it reaches a golden-honey color. If the saucepan is too dark to judge the caramel color, carefully take a small amount of the mixture with a spoon and place it on a sheet of white paper—the level of caramelization will become evident. Preparation: Chop and roast the almonds. Combine sugar and water in a medium heavy-bottomed saucepan. Be careful not to splash the mixture onto the sides of the pan. Boil over high heat, stirring, until the sugar dissolves. Using a clean, water-moistened pastry brush, wipe down any sugar crystals from the sides of the pan. Cook the sugar mixture over high heat until it turns light golden, about 10–15 minutes. Do not leave the pan unattended. Remove the pan from heat and carefully stir in the chopped almonds. Immediately pour the mixture into a greased pan or baking sheet. Let it cool completely, then break into pieces. Store grillage in an airtight container for up to 5 days. Serve chilled.
