
Oyster Mushrooms in Spicy Japanese Sauce

Prepare all ingredients.

Wash the oyster mushrooms well and pat them lightly dry. Trim off the base and separate the mushrooms. Slice large mushrooms lengthwise into strips; small ones can be left whole. All my mushrooms are fairly small, so I just separate them.

Cut the bell pepper into thin strips.

For the sauce, blend garlic, hot pepper, soy sauce, sesame oil, rice vinegar, and lemon juice.

Transfer the mushrooms and bell pepper to a deep bowl or food container. Pour in the sauce and mix. Let marinate for half an hour.

Heat a skillet over medium heat and sear the oyster mushrooms on all sides until almost all the liquid has evaporated. This will take about 15–20 minutes. At first, cook over medium-high heat so the sauce evaporates faster and the mushrooms sauté rather than stew, then reduce the heat.

When the mushrooms turn golden brown, add finely chopped green onions at the end and lightly salt to taste.
