
Polish-Style Mushrooms
Description
This recipe won't take much time. Colorful marinated mushrooms are so tempting! They only need 20 minutes to prepare, but for the mushrooms to turn out juicy, they need to be cooled in the marinade. Add onion to it—it will give the appetizer a piquant aroma. However, there's no need to use garlic. Serve with herbs and sauce.

Step 1

Prepare the listed ingredients. Rinse the mushrooms in water, removing dust and dirt, and trim away any spoiled parts. Any type of mushrooms may be used.

Place the mushrooms in a kazan or pot. If they are large, cut them into pieces. Add small mushrooms whole.

Add the salt and bay leaves. If desired, you may also add a couple of black peppercorns, but not allspice, so that it does not overpower the mushroom aroma.

Peel the onions, rinse them in water, slice into half-rings, and place in a kazan. Pour in hot water, vinegar, and vegetable oil, and put the pot on the stove.

Bring to a boil and simmer for 15–20 minutes over moderate heat. Watch to make sure the foam does not spill over the edges. If you want to preserve the mushrooms for winter, scald the lid and jar with boiling water and pour the hot marinade with mushrooms directly into the jar. Seal immediately with the lid, cool at room temperature, and then store.

If you do not plan to preserve the mushrooms, let them cool right in the marinade. As they cool, they will "absorb" it, becoming juicy and flavorful. Place the Polish-style mushrooms in a serving bowl and serve chilled. Enjoy your meal!
