Wash and dry the mushrooms. Cut off the stems, as they are not needed for this recipe.

Press the mushroom caps between two cutting boards until flattened into steaks.

Mix the flour, starch, spices, and soy sauce. Add water until you achieve a thin batter consistency.

Dip the mushroom caps in batter, then fry over medium heat for 5 minutes on each side. While frying, press down slightly on the mushrooms to release excess liquid.
