
Mushroom solyanka with oyster mushrooms
Description
You can add spices to the pot during the final simmering stage. Dried rosemary or saffron will give the solyanka a slightly different flavor, which is a matter of personal preference. Serve the solyanka hot with black bread.

First, thinly and finely chop the cabbage.

Place the cabbage in a saucepan. Add 1 liter of water and vegetable oil. Salt and mix. Put on low heat and simmer for 5 minutes. Then remove from heat.

Finely chop the onion and carrot, and add them to the frying pan. Fry in a small amount of vegetable oil for about 4-6 minutes.

Add the onion and carrots to the cabbage, mix thoroughly.

Wash the mushrooms and cut the large ones in half. Pour a little oil into a frying pan, add the mushrooms, salt them, and cover with a lid for 3 minutes. Simmer over low heat for 3 minutes, then increase the heat and fry the mushrooms, stirring them.

Add the mushrooms to the cabbage, mix, turn on low heat, cover the pot with a lid, and simmer for 15 minutes. Then turn off the heat, let the stew cool slightly, and transfer it onto plates.
