
Mushroom Caviar with Garlic
Description
It works for both holidays and everyday meals. We will make the caviar from mushrooms, adding carrots, onion, and garlic. A small amount of cognac will also give the caviar a special touch, and the dish will be finished with cream mixed with flour. You can serve this caviar with various porridges; it is especially delicious with buckwheat or mashed potatoes. It can be served warm or chilled.

Prepare all the necessary ingredients. Wash the mushrooms and dry them. Peel the vegetables.

Peel the onion, rinse and dry it, and cut into small cubes.

Grate the carrots on a medium grater.

In a skillet, heat a few tablespoons of vegetable oil and sauté the carrots and onion for 5–7 minutes. Then add 50 ml of good cognac and cook until the cognac evaporates, 4–5 minutes, stirring the vegetables constantly.

Cut the mushrooms into small cubes.

Add the mushrooms to the skillet with the vegetables and sauté for 5–7 minutes until the mushrooms have reduced in volume.

Separately mix the cream and flour, then pour the resulting mixture into the skillet.

Add peeled garlic passed through a press, salt, and pepper. Simmer the caviar for 7–8 minutes, until thickened.
