
Mushroom Caviar from Fresh Mushrooms
Description
Homemade preserves keep for a long time. I decided to make a tasty mushroom snack. For this I used fresh chanterelles, honey fungus, and red-capped boletes. Mushroom caviar made from fresh mushrooms at home turned out very tasty. It should be stored in a cold place. Keep it for no more than one to two months, though I doubt you’ll be able to wait that long without trying such a delicious treat. Good luck. Serve it at the table or store it in the pantry.

Fresh mushrooms: sort through carefully, rinse well, cut into pieces, and boil in salted water until tender.

Finely chop the onion and sauté it in vegetable oil until translucent.

Transfer the boiled mushrooms to a blender and blend until smooth.

Peel the carrots and grate on a medium grater. Add to the onions and cook over low heat until done. Season with salt to taste and add garlic pressed through a garlic press. Simmer covered for about 20 minutes.

Now mix the mushrooms with the onion and carrot, salt and pepper to taste. Divide among sterilized jars and seal with lids.
