Fried Bread with Tomatoes

Suitable for both holidays and everyday meals. This tomato crouton recipe is extremely simple and unfussy—the kind of dish you can make “from almost nothing,” since even experimenting with different breads, oils, and spices can give your sandwiches completely different flavors. So give it a try, and before long you’ll have invented your own tomato crouton recipe. For now, here’s mine: 1. Slice the bread into even pieces about 1 cm thick. 2. Shake off excess crumbs (they can start to burn while frying), and season the bread on all sides with salt, pepper, and spices. 3. Fry the croutons in a skillet with vegetable oil on both sides. 4. Slice the tomatoes very thinly and place them on the croutons. Dry them a little longer—about 10 minutes in the oven, or a few minutes in the microwave on full power, with foil or parchment underneath. Done! Of course, this is a simplified version of tomato croutons, but you can also add slices of cheese, ham, or vegetables that hold up to heat. Serve with fresh herbs and sauce.
