
Grapefruit Cake
Description
Homemade baked goods for tea. Here is a fairly simple grapefruit cake recipe. You can prepare a cake with the flavor of any other citrus in the same way—orange, mandarin, lemon, and so on—but I like the grapefruit version best. In my opinion, the cake turns out perfect—the sponge is so moist and soft that no frosting is needed, and you can imagine what aroma fills the kitchen while it bakes. The baking is ready. Serve at the table.

In a large bowl, mix the sugar and 2 tablespoons of grapefruit zest. Rub well with your fingers.

Add the eggs, 3 tbsp freshly squeezed grapefruit juice, and melted butter to a bowl. Whisk thoroughly.

In a separate small bowl, mix the flour, salt, and baking powder. Whisk until combined.

In a small bowl, mix the sour cream and 2 tbsp. milk.

Into the bowl with the egg mixture, alternately add one third of the dry flour mixture, one third of the sour cream mixture, one third of the flour, one third of the sour cream, the remaining third of the flour, and the remaining third of the sour cream. After each addition, beat the mixture well with a whisk. Carefully pour the batter into a baking pan lined with parchment paper.

Bake the cake for 40–45 minutes at 180°C until a toothpick inserted in the center comes out clean.

Remove the finished cake from the oven, let it cool in the baking pan for 10–15 minutes, then remove from the pan.

Meanwhile, prepare the glaze by mixing powdered sugar, 2 tbsp. milk and 1 tbsp. sour cream. Whisk lightly with a whisk.

Cover the still-warm cake with glaze.

When the glaze has set, the grapefruit cake can be sliced and served.
