
Buckwheat zrazy
Description
The recipe won't take much time. The filling for buckwheat zrazy can be made from any vegetables, mushrooms, or meat (in the non-fasting version). Just keep in mind that the filling shouldn't be too moist, so the patties are easy to shape. Serve hot.

Prepare all the necessary ingredients for making buckwheat zrazy. If buckwheat flakes are unavailable, use cooked buckwheat groats (about 400 grams).

Bring the water to a boil and pour it over the flakes, add salt and mix. Let it sit for 5-7 minutes to swell.

While the flakes are steeping, prepare the filling for the zrazy. Finely chop the onion and fry it in a pan with sunflower oil.

Grate the carrots on a coarse grater and add them to the pan with the onion. Fry for another 3-5 minutes, then add paprika and season with salt to taste at the end of cooking. Let the cooked vegetable filling cool slightly.

While the filling is cooling, finish preparing the base for the zrazy: grate the peeled raw potato on a fine grater and add it to the soaked flakes.

Thoroughly combine the filling ingredients by kneading them with your hands. If using boiled buckwheat, first mash it with a spoon or potato masher, then add the potato and perform the same steps.

To shape the zrazy, sprinkle a small amount of breadcrumbs onto a flat surface, spread a portion of the buckwheat filling onto it in the shape of a patty, and place a portion of the filling in the center.

Seal the edges of the patty so that the filling is completely enclosed by the dough, shape the patty into its final form, and coat it with breadcrumbs on all sides.

Form all the zrazy this way (8-10 pieces) and place them on a baking sheet lined with parchment paper.

Bake buckwheat zrazy at 200-220 degrees Celsius for 20-30 minutes, flipping them to the other side if necessary during baking. This way, the zrazy will have a golden, crispy crust on both sides.
