Buckwheat noodles with turkey and vegetables

Description

The dish is prepared without unnecessary complications. Buckwheat noodles, correctly called soba, have a beautiful caramel milk color and a firm, velvety texture, which distinguishes them favorably from other types of noodles. According to this recipe, they have a pleasant salty-sweet taste, spiciness from garlic and pepper, and tender vegetables. If you don't like broccoli, use string beans instead, and substitute the green onion with the white part of leek. Instead of ready-made fillet, you can use any part of poultry, simply removing all the bones. The finished dish can now be served.

    Prepare all the necessary ingredients for making buckwheat noodles with turkey and vegetables.

    Cut the turkey fillet into strips and place in a bowl. Pour soy sauce and vegetable oil over it, mix well and let marinate for 10 minutes.

    Pour 1 liter of water into a saucepan, bring to a boil, and add buckwheat noodles. You can break them if you don't like long noodles, and cook for 10 minutes. Drain in a colander and let all the water drain off completely.

    Place the skillet over medium heat and heat it up. Add the fillet and cook for 3-6 minutes, until done. Do not overcook, otherwise the turkey will be dry. Transfer to a plate.

    Wash the bell pepper, remove the stem and seeds, and cut into thin strips. Add to the pan after browning the turkey.

    Rinse the broccoli with hot water, separate into small florets, and add to the pan with the bell pepper.
