
Buckwheat with meat
Description
Buckwheat with meat is excellent for satisfying hunger and provides long-lasting fullness. To enhance the dish's flavor, lightly sauté the buckwheat together with the meat before adding liquid. If you have chicken or beef broth on hand, use it. If not, add spices, herbs, and seasonings to taste. At the very end, you can add a bit of garlic or chopped fresh herbs.

Prepare the listed ingredients. Rinse the meat under water, dry it with paper towels, and cut it into portion-sized pieces. Keep in mind that the meat will shrink by about half during cooking, so don't cut it too small. Rinse the onion and trim off the roots.

Heat a cauldron or a non-stick pot on the stove, add vegetable oil. Place the pieces of meat fatty side down so that the fat melts slightly.

Chop the green onion and add it to the container. It will give the dish a more pronounced flavor and aroma, so it should be added at the beginning. Fry everything for 8-10 minutes over medium heat, stirring occasionally.

Meanwhile, rinse the buckwheat groats in a bowl by pouring cold water into it. Remove any burnt seeds.

By this time, the meat will have acquired a golden crust and will be fried on all sides. If you are cooking beef instead of pork, you need to add 100 ml of boiling water at this stage and simmer the beef for another 20 minutes over moderate heat, as it takes slightly longer to cook than pork.

Add the washed buckwheat, but do not pour boiling water yet—lightly toast it first so it absorbs the meat juices.

Add the spices and seasonings and mix well. Sauté the contents of the container for 2-3 minutes, stirring occasionally.

Then pour in boiling water and stir again. Bring to a boil, reduce the heat to moderate. Cover the container with a lid and simmer the buckwheat for about 15–20 minutes, until cooked and it has absorbed all the broth.

After the specified time, the dish will be completely ready! You can add dried minced garlic and finely chopped dill and parsley to the buckwheat.
