Use clean buckwheat of good quality, grind it into flour. Use a coffee grinder or food processor for this purpose.

Sift rye, wheat, and buckwheat flour thoroughly. Soak raisins in warm water for 10 minutes, and chop nuts coarsely, not too finely.

In a large bowl, mix all types of flour, stir well and make a well in the center. Pour in room temperature water.

Mix well and knead the dough slightly. Then cover the bowl with plastic wrap and let it rest for 15 minutes.

Then add salt and yeast to the dough. Knead until the dough starts to come away from your hands. Cover with a towel and leave in a warm place for 40 minutes.

Add nuts and raisins to the dough, mix well. Then divide the dough into 2 parts and shape into loaves—either place into a pan or form a round loaf. Cover and let rest for 1.5 hours.
