Description

A simple way to prepare food ahead for later. Of course, preserved Greek salad will differ from the regular version; many ingredients simply cannot be used. Traditionally in our family, canned Greek salad is a salad of beans, peppers, tomatoes, and carrots. To make Greek salad for winter, soak the beans in advance. The salad itself is very easy to make—see the recipe. Jars keep for up to a year in a cool place.

    Cut the vegetables: tomatoes into wedges, onion into half-moons, carrot and pepper into thin strips.

    Put everything into a pot, add the beans, spices, oil, and vinegar. Place on a heat diffuser; once it comes to a boil, simmer for another 2 hours, stirring.

    This is the kind of Greek salad you get for winter. We can it in jars—you end up with quite a lot: 6 jars.
