
Greek pie

Perfect with tea and coffee. I’m sharing a recipe for a delicious Greek pie, “Bougatsa,” with delicate custard cream made with phyllo dough. No phyllo dough? No problem! I’ll tell you how to make it quickly and easily. The recipe makes 2 medium-sized pies. The pie is simple to make—follow the step-by-step recipe and treat yourself and your loved ones to delicious pastry. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Start preparing the pie with the cream. To do this, pour 100 ml of milk into a saucepan, add 20 grams of starch, semolina, and 15 grams of flour, and stir.

Add 2 eggs, mix, and add a little salt to balance the flavor.

Pour 400 ml of milk into a saucepan, add 100 grams of sugar, 50 grams of butter, lemon zest, and a packet of vanilla sugar. Place over heat, stirring constantly. As soon as the milk heats up, slowly pour in the previously prepared egg mixture in a thin stream, and cook until thickened, about 1 minute.

Remove the cream from the heat, cover it tightly with plastic wrap so it touches the surface, and let it cool.

To prepare the filo dough, sift the flour into a mixing bowl, add salt and baking powder, and mix.

Make a well in the flour, pour in 180 ml of milk, vegetable oil, and 1 egg, and knead the dough. Knead by hand for 7–10 minutes, until it becomes soft and elastic and no longer sticks to your hands.

Place the kneaded dough in a bowl lightly dusted with flour, cover with plastic wrap, and let it "rest" for 30 minutes.

Divide the dough into 6 equal portions (about 108 grams each). Shape each portion into a ball, cover with plastic wrap, and let rest for 5–7 minutes.

Prepare a mixture of 130 grams of starch and 50 grams of flour.

Generously dust the work surface with a mixture of flour and starch, roll each ball into a rectangle about 2 mm thick, then stack all 6 sheets of dough, generously dusting each layer with the flour and starch mixture.

Next, using a rolling pin, gently stretch the dough in all directions until it becomes very thin and translucent. Brush away excess flour and starch with a pastry brush, separating the layers from one another.

Grease the baking dish with melted butter, then lay out three layers of dough one after another, drizzling each layer with butter.

Spread half of the custard cream. Cover with the overhanging edges of the dough.

Then spread the remaining cream. Cover again with the dough on top.

Bake the pie for about 20–25 minutes at a temperature of 190 degrees.
