
Greek yogurt at home
Description
Doubling or tripling the proportions, you can prepare this dairy base for the whole family every day if you love fresh, thick, and creamy yogurt. The product is perfect, low-calorie, delicious, and fresh. It can be stored for about 2–3 days after preparation.

Step 1

Prepare the listed ingredients. Use milk of any fat content, cow's or goat's. It's best to use farm milk rather than store-bought. The yogurt can be of any fat content, but must be plain, without any additives! Remove the ingredients from the refrigerator half an hour before cooking so they can come to room temperature. The yogurt should be thick, not drinkable, and preferably in a small container.

Pour the milk into a saucepan and heat on the stove to 40-50 degrees, then turn off the heat and cool the liquid down to 30 degrees. Drop a bit of milk onto the back of your hand—it should not feel hot!

Pour the warm milk into a deep bowl and add the yogurt. Mix thoroughly.

Pour the entire mixture into small jars. Small containers are necessary, as yogurt in a 0.5-liter jar will not become as thick.

Close them with lids, wrap in a warm towel, scarf, or blanket—whatever you have on hand. Leave for 3–4 hours. After that, without opening, place the jars in the refrigerator overnight.

In the morning, you'll get thick Greek yogurt; the key is to drain a little of the clear whey from the top, then enjoy the yogurt's creamy flavor.

If desired, you can prepare breakfast by adding quick-cooking oatmeal to the container, pouring the prepared yogurt over it, and adding honey or sugar to taste.
