
Vegetable gratin
Description
The recipe won't take much time. The suggested gratin version is vegetarian. However, you can certainly add your favorite cheese to the breadcrumbs, previously grated finely. Instead of breadcrumbs, you can also use dried bread crumbs. Experimenting with ingredients, you'll get a new flavor each time. Serve hot.

Prepare the necessary ingredients.

Cut the onion into random pieces, but do not chop finely. Slice the carrot into rounds. Sauté the vegetables in half of the indicated amount of vegetable oil.

Slice the eggplants into rounds. Transfer to a bowl, add salt, mix and let stand for 30 minutes.

Season the tomato juice to taste with salt, add spices, and mix.

Place the sautéed onions and carrots at the bottom of the baking dish.

Slice the tomatoes into rounds. Place the eggplants and tomatoes alternately into the baking dish, arranging them vertically.

Preheat the oven to 200 degrees. Pour tomato juice over the prepared vegetables. Bake for 25 minutes.

After the specified time, remove the pan with the vegetables, pour the remaining vegetable oil on top, and generously sprinkle with breadcrumbs. Return to the oven and bake at 180°C for 10–15 minutes.
