1. First, break the broccoli into florets and place them in a bowl. Set aside for now.

2. Heat olive oil in a large saucepan. When the oil is hot, add flour and cook for about one minute, stirring constantly. Gradually start pouring in the milk, stirring continuously. The mixture should become a smooth, thick mass.

3. Season the sauce with salt and pepper to taste. Add the broccoli, bring to a boil, then simmer over low heat for 15 to 20 minutes until the broccoli florets become tender.
