
Cherry Granita
Description
The recipe won't take much time. Place the cherries in a colander and let the liquid drain off. Puree the cherries in a food processor or blender until smooth. Strain the puree through a fine sieve into a medium bowl. Use a spoon to press the cherries and extract as much juice as possible. Add vinegar. In a medium saucepan, combine sugar with 2/3 cup of water and cook over medium heat, stirring until the sugar dissolves, about 4 minutes. Remove the saucepan from heat and let it stand until cooled. Add the cooled syrup to the cherry puree. Pour the mixture into a shallow metal pan, then place it in the freezer for 1 hour. Stir the mixture with a fork and return it to the freezer for 5 hours, stirring with a fork every hour. Serve immediately or store in an airtight container in the freezer for up to 2 days. Serve chilled.
