
Lime Granita with Pistachio Cookies

1. Prepare the cookies. Cut the butter into cubes. Finely chop the pistachios. In a food processor, mix the flour with powdered sugar and salt. Add the butter, pistachios, egg yolk, and vanilla extract. Blend the mixture.

2. Place the dough on the work surface. Divide the dough in half. Roll each piece into a long strip.

3. Wrap in plastic wrap or parchment paper and refrigerate for 4 hours. Remove the plastic from the dough, slice into pieces, and bake in the oven at 160°C for 15-18 minutes, until lightly golden.

4. Prepare the granita. In a medium saucepan, combine 2 cups of water and 1 cup of sugar. Bring to a boil over high heat, stirring until the sugar dissolves. Reduce heat to medium and cook for 5 minutes. Cool the syrup. Mix it with lime juice.

5. Pour the syrup into a glass baking dish. Cover with a lid and place in the freezer. Stir the granita every 45 minutes while it freezes, for 3 hours total. The granita can be made 2 days ahead; cover with a lid and keep frozen. Prepare the cream. In a medium bowl, beat sour cream with powdered sugar using a mixer. The cream can be prepared 1 day ahead; cover and refrigerate. The resulting cream can also be used to decorate pistachio cookies.

6. Using a fork, mix the granita and spoon it into serving glasses. Garnish with sour cream, lime zest, and serve with pistachio cookies.
