
Pomegranate syrup
Description
The dish is prepared without unnecessary complications. The homemade pomegranate syrup made according to this recipe can be used for desserts, jellies, baking, liqueurs, and even meat dishes. If desired, it can be sealed in sterilized jars and used as needed. The finished dessert can be served at the table.

1. First, select good pomegranates—neither wilted nor green. Wash them and cut in half. Carefully break into small pieces.

2. Fill a deep bowl with cold water and place the prepared pomegranate into it. You can continue separating the seeds from the peel directly in the water. This step marks the beginning of the pomegranate syrup recipe, as it helps remove all the membranes that could make the syrup bitter. The seeds will sink to the bottom, while the light membranes will float to the surface. Carefully remove the membranes with a sieve. Rinse the seeds thoroughly once again afterwards.

3. Washed and sorted grains need to be thoroughly dried (it's most convenient to leave them in a colander for 10-15 minutes to drain all the water).

4. Then transfer the pomegranate to a deep bowl and sprinkle with sugar. The amount of sugar depends on your taste preferences and the sweetness of the fruit itself. Lightly press the seeds with a spoon or potato masher to release the juice. Let the seeds sit in the sugar for 7-8 hours or overnight.

5. Once the berries have released their juice and the sugar has dissolved, carefully pour off the resulting syrup. If desired, you can squeeze out additional juice using the same masher or clean cheesecloth. Transfer the syrup to a saucepan and place over low heat.

6. To give homemade pomegranate syrup a slight tartness, add 2-3 tablespoons of lemon juice. Bring the syrup to a boil and simmer over low heat until it begins to thicken.

7. This syrup can be poured hot into jars and sterilized for about 20–25 minutes. This simple pomegranate syrup recipe can also be used to make jelly or alcoholic cocktails.
