
Beef liver with onions

1. Cut the beef liver into thin slices with a sharp knife. Rinse each slice in water and place into a bowl.

2. Pour milk over the liver slices, making sure they are completely covered, and let them soak for 1-2 hours. This is important to remove the bitterness of the liver, which some people find unpleasant.

3. Peel the onion and slice it thinly into rings using a very sharp knife – the thinner you can make them, the better.

4. Heat a couple of tablespoons of oil in a skillet, separate the onion rings into pieces, and sauté until soft.

5. When the liver is ready, heat the remaining oil in the same skillet where you fried the onions. Drain the milk from the liver thoroughly.

6. Mix the flour with the spices, and coat each piece of liver in this mixture. Place the liver in a single layer on a frying pan, and fry over medium heat until golden brown on each side.
