We start the preparation by peeling the vegetables, filling a pot with water, placing it over heat, putting the whole vegetables into the pot, bringing to a boil, and adding the whole liver. Once boiling, carefully skim off the foam and reduce the heat.

Simmer for about 15 minutes over low heat, periodically skimming off the foam. Tip: to keep the liver juicy and tender, season with salt at the end, a few minutes before finishing the cooking.
