
Beef tripe in tomato sauce
Description
The recipe won't take much time. Tripe contains a large amount of B vitamins, has no carbohydrates, little fat, and a very high protein content—95–97 percent! This makes it a high-protein, low-fat, carbohydrate-free product—an excellent "building material" for muscle tissue. Due to this composition, dishes made from beef tripe can be included in various diet plans (including for diabetes). Consuming beef tripe dishes has a generally beneficial effect on the condition of skin and mucous membranes, as well as on the digestive and nervous systems. Serve hot.

Undoubtedly, it's quite difficult for a city dweller to process fresh tripe on their own. However, nowadays you can buy fully cleaned and ready-to-cook tripe at stores. Rinse the tripe thoroughly, cut it into pieces, cover with cold water, and bring to a boil. Simmer for a couple of minutes, then drain the water. Rinse the tripe to remove any foam and cover again with fresh water. Repeat the process if desired. If everything is in order, simmer the tripe over low heat for a couple of hours until tender, adding a whole onion and peppercorns.

Remove the tripe and strain the broth, reserving about half a liter. Cut the tripe into thick strips.

Chop the onion.

Heat a mixture of vegetable and clarified butter. Add the tripe and fry until a golden crust forms. Add the onion, lightly brown it, and sprinkle with paprika. Fry for another couple of minutes.

Sprinkle the tripe with flour and fry for another minute. Add tomato paste and fry everything for a couple more minutes.

Pour in the broth, mix well. Season with salt and pepper to taste, add your favorite spices, and simmer covered until the sauce thickens.

Serve the tripe hot, with soft rye bread and fresh herbs.
