Description

Steak pairs well with any side dish of your choice, like most meat dishes. The most popular options are potatoes, pasta, porridge, and vegetables (fresh or roasted). In parallel, you can prepare a simple sauce based on cream, tomatoes, or the fat rendered from searing the steak.

    Wash the meat and cut it into pieces across the grain, about 3 centimeters thick each, then rub each piece with salt and pepper on both sides.

    Heat a frying pan with vegetable oil and fry each piece for 10 minutes (5 minutes per side).

    Transfer the meat to a rack and cover with foil; let it rest for another 5 minutes.

    Pour wine and vinegar into a saucepan, add finely chopped onion and tarragon, and simmer until the liquid is reduced by half. Strain the resulting mixture through a sieve.

    Beat the yolks into a bowl and pour in the prepared mixture, whisk over a steam bath until a thick mass forms, then gradually add the butter one teaspoon at a time (do not add the next teaspoon until the previous butter has fully dissolved).

    Remove the bowl from the heat once all the butter has melted, pour in the lemon juice, and add a little salt and pepper.
