1. Preheat the oven to 135 degrees. Finely chop the garlic. Dice the onion. Grate the cheese and chop the parsley. Heat the olive oil in a large pot over medium heat. Season the ribs with salt and pepper. Sear in the oil for about 1 1/2 to 2 minutes on each side. Remove from heat and transfer to a plate.

2. Drain the oil. Add garlic and onion to the pot. Stir and cook for 1-2 minutes. Then add tomatoes, tomato sauce, wine, salt, red pepper, and thyme. Mix until well combined. Using tongs, return the ribs to the pot, submerging them as much as possible into the sauce. Cover and place in the oven. Braise for 3 1/2 to 4 hours. The ribs should be tender. Let the cooked ribs cool, then cover tightly and refrigerate. Let the sauce in the pot cool slightly, then refrigerate for several hours or overnight.

3. Heat the ribs in a pan before serving. Cook the pasta according to the instructions on the package.

4. Place the pasta on a large serving dish, pour the tomato sauce over the top, and arrange the ribs on top. Sprinkle with a little Parmesan cheese and finely chopped parsley.
