Beef ribs with vegetables and creamy sauce

Description

The recipe won't take much time. Serve the ribs with mashed potatoes as a side dish. Serve hot.

    1. Dice the onion, carrots, and celery. Season the ribs with 1 tablespoon of thyme and black pepper. Cover and refrigerate overnight. Remove the ribs from the refrigerator one hour before cooking and let them come to room temperature. After 30 minutes, season all sides with salt. Preheat the oven to 220 degrees.

    2. Mix the pearl onions with 2 tablespoons of olive oil, 1 teaspoon of thyme, 3/4 teaspoon of salt, and a pinch of pepper. Spread the onions on a baking sheet and bake for about 15 minutes, until tender. Once cooled, peel the onions and set aside. Reduce the oven temperature to 160°C. Sear the ribs in a large skillet over high heat for 3 minutes. Add 3 tablespoons of olive oil and cook for 1-2 minutes. Transfer the ribs to a pot and cook until browned, about 45 minutes. Remove and place on a plate.

    3. Reduce the heat to medium and add onion, carrot, celery, thyme (1 teaspoon), and bay leaves to the pot. Stir with a wooden spoon. Cook for 6–8 minutes. Add balsamic vinegar, port wine, and red wine. Cook over high heat until the liquid is reduced by half.

    4. Add the broth and bring to a boil. Place the ribs in the pot in a single layer. Arrange thyme sprigs around the meat. Cover tightly with a lid and simmer in the oven for approximately 3 hours.

    5. Let it stand for 10 minutes, then place the ribs on a baking sheet. Preheat the oven to 200 degrees. Bake the ribs for 10-15 minutes until browned. Strain the broth and season to taste.

    6. Sauté chard in a frying pan over high heat for 2 minutes. Cut into large pieces. Add 3 tablespoons of olive oil to the pan and stir together with pearl onions. Add half of the chard and cook for 1–2 minutes, stirring. Add the remaining half of the chard. Season with 1/4 teaspoon of salt and a pinch of ground black pepper. Cook for a few more minutes, stirring, until the chard becomes tender.

    7. Place the chard on a large warm serving dish, then top with the ribs. Pour broth over the top and serve with vegetables, sauce, and mashed potatoes. To prepare the sauce, mix all ingredients in a bowl until smooth.
