
Beef Fingers with Sauce
Description

In a small bowl, mix all the dry ingredients: flour, salt, black pepper, and cayenne pepper. Mix thoroughly.

In a separate bowl, whisk the eggs with milk until smooth.

Cut the beef into long strips. Coat each strip well in the dry mixture.

Then dip each beef finger in the egg mixture.

Then - again in the dry mixture.

Similarly, bread all the remaining beef fingers.

In a skillet, melt the butter. Place the beef fingers into the melted butter. Fry over medium heat until the batter is golden brown on one side...

...flip over and fry on the other side until similarly done.

Place the fried fingers on a paper towel so it absorbs the excess fat.

At this point you can stop cooking, but we will also make a sauce. Add flour to the same pan where the fingers were fried. Whisking quickly, fry it until you have a smooth, thick, golden mass (as in the photo).

Pour in a glass of milk.

Season with salt and pepper, whisk lightly (until the mixture becomes homogeneous), and reduce to the desired consistency.
