
Gordon Ramsay's Beef Wellington
Description
The recipe won't take much time. According to Ramsay's original recipe, the beef turns out medium rare, which isn't to everyone's taste. That's why I cook the meat thoroughly, which my family and I prefer. I'll definitely explain both options in the recipe! Serve hot.

Prepare all the main ingredients. Wash the meat and mushrooms thoroughly. Defrost the dough in advance.

Pat the meat dry with a paper towel, then season with salt and freshly ground pepper.

Sear the meat over high heat in olive oil on both sides, about 2 minutes per side! It should develop a golden-brown crust, but the inside will not be fully cooked yet. Remove the meat from the pan and immediately brush it with mustard.

Cut the mushrooms into pieces, season with salt and pepper, then blend with a blender. Transfer the mushroom pâté to a dry skillet without oil and cook the mushrooms until all the liquid has evaporated. Approximately 7-10 minutes.

Place the ham slices overlapping each other.

Evenly distribute the mushrooms over the ham.

Place the beef in the center and wrap it with ham. Tightly wrap the whole thing in plastic wrap and refrigerate for 20 minutes.

While the meat is resting, roll out the dough into a square sheet on a floured surface. After 20 minutes, remove the meat from the plastic wrap and place it in the center of the dough. Generously brush the dough edges around the meat with yolk.

Wrap the meat in dough. Brush the seams and entire surface of the dough with egg yolk.

Place the dough in a greased baking dish or on a baking sheet, seam side down. Make several cuts on top with a knife and sprinkle with salt.

Now, about baking! According to Ramsay's recipe, place everything in the oven and bake for 30-40 minutes at 200 degrees Celsius. By this time, the dough will be fully cooked, and the meat will be medium rare, with some blood. If, like me, you don't enjoy that, cover the dish tightly with foil, reduce the oven temperature to 150-160 degrees Celsius, and bake for another hour! Then the meat will be completely cooked through!
