
Beef in tomato sauce
Description
This dish is for true meat lovers: it contains plenty of juicy, flavorful meat. To prepare beef in tomato sauce, we need ripe tomatoes; using tomato paste will result in a different taste. Choose dry white wine—the most important factor—its price is not crucial. Be sure to include thyme and basil, in addition to rosemary.

Cut the meat into medium pieces and soak in wine.

Add spices and marinate in the refrigerator overnight (ideally), or for a couple of hours.

Scald the tomatoes with boiling water.

Peel off the skin.

Drain the marinade, dry the meat, and fry until golden brown, stirring constantly.

Make sauce from tomatoes: blend in a blender, add garlic, olives, and spices. Pour the sauce over the meat.
