
Flemish-style beef in beer

Finely chop the onion and garlic.

Cut the beef into 3 cm pieces across the grain and coat in flour.

In a heavy-bottomed pot, sauté the onion and garlic in olive oil until translucent.

Add the meat and sear until a brown crust forms on all sides.

Pour beer and broth over the contents of the pot, add rosemary, bay leaf, and spices. Bring to a boil, then reduce the heat and simmer gently for 2 hours. Half an hour before it's done, you can optionally add some sliced carrots to the pot.
