
Beef stewed with saffron
Description
The recipe won't take much time. The aroma of the finished dish will transport you to the Far East—try this meat once, and you'll want to cook it again and again. Its amazing, unique flavor comes from spices, lemon, and prunes. Saffron, combined with the other seasonings, works wonderfully, enhancing and intensifying the beef's aroma. The result is delicious beef stewed with saffron and spices. Serve hot.

1. In this case, I used beef, but once I tried lamb—it was also quite good. So, cut the meat into medium-sized pieces and fry in a deep-sided skillet or sauté pan.

2. Chop the onion and add it to the meat when it starts to acquire a light golden color (by that time, excess liquid will have evaporated).

3. Add saffron and salt, fry with occasional stirring.

4. Now it's time to add the key ingredient to the dish – the spices. They are what make the meat's flavor and aroma extraordinary. Add the spices in the specified proportions, fry for a couple of minutes, then pour in water (about one glass).

5. Simmer the meat for about an hour over low heat. If you're using veal, then about 40 minutes.

6. In the middle of frying, add lemon cut into slices and prunes (no need to soak them beforehand). Simmer until excess water has evaporated.

7. While the meat was simmering, I decided to prepare a side dish. The perfect side in this case is rice. Pour the finished sauce with meat, prunes, and lemon over it, and sprinkle with fried almonds. Believe me, you'll experience an incredible flavor combination unlike anything else!
