
Beef stewed with beer and paprika

1. Dice the onion. Peel and coarsely chop the carrot. Cut the potato into 4 pieces. Pass the garlic through a press. Heat olive oil and butter in a large pot over medium heat. Sear the meat in two batches. Transfer to a plate, cut in half, and set aside.

2. Add the chopped onion to the pot. Stir and cook for 2-3 minutes, until softened. Then add the garlic and cook for another minute.

3. Pour in the beer and beef broth, then add Worcestershire sauce, tomato paste, pepper, salt, paprika, and sugar.

4. Add beef to the pot. Stir. Cover with a lid and simmer for 1 1/2 to 2 hours. If the liquid thickens and reduces too quickly, add additional water as needed.

5. Add carrots and potatoes, cover with a lid, and cook for another 30 minutes. If the stew is too dry, add a cup of hot water. Add spices and salt as needed. Serve the beef with crusty French bread, garnished with chopped parsley if desired.
