First, let's deal with the eggplants. If you find them a bit bitter, you can peel them, sprinkle with salt, and leave for 10–15 minutes. But I skip all these steps since I'm perfectly fine with them as they are, so I simply rinse the eggplants and cut them into strips.

Now you need to blanch the tomatoes—make a cross-shaped incision at the top of each tomato and dip them in boiling water for a minute; after this, the skins will easily peel off. Chop one peeled tomato into cubes, and blend the rest in a blender into a puree, then mix it with tomato juice.

Next, we cut the beef into strips (across the grain), and finely chop the onion and garlic.

Then pour a teaspoon of olive oil into a heated skillet and add two tablespoons of water. Add the onion and garlic to the skillet and sauté until the onion becomes translucent. After that, add the beef and simmer for 5 minutes, stirring occasionally.
