
Beef with pumpkin
Description
I like the beef with pumpkin recipe primarily because it contains nothing superfluous. Sometimes you open a recipe and see so many strange ingredients that you immediately lose the desire to cook. But here, since it's beef with pumpkin, essentially nothing else is needed besides these two ingredients—just a bit of herbs for aroma, salt and pepper to taste, and oil for searing the meat. The dish turns out excellent—juicy and tender. I especially enjoy it in late autumn when it's already cold outside.

Cut the beef into pieces about 3 cm on each side. Season with salt and pepper.

In a skillet, melt the butter and sear the beef over high heat until a crust forms on all sides.

Peel the pumpkin and cut it into small cubes.

Place beef and pumpkin into a saucepan. Add salt, pepper, fresh herbs, and a little lemon juice. Pour in about 5 cups of water or broth. Bring to a boil, then reduce the heat to low, cover with a lid, and simmer for about an hour and a half, until the meat is tender. The liquid will almost completely evaporate during this time.
