
Beef stewed with vegetables in wine
Description
The recipe won't take much time. Serve the beef stewed in wine with mashed potatoes. Serve hot.

1. Cut the beef into 5 cm cubes. Heat oil in a pot over medium heat. Sear the meat, seasoning it with salt and pepper. You may need to do this in two batches, depending on the size of the pot. Cook the meat without stirring for 2-3 minutes, until the bottom is nicely browned.

2. Flip and cook until browned on the other side. Transfer the meat to a plate. Drain the fat from the pot. Cut the bacon into 8 mm cubes. Finely chop the onion, carrots, and celery.

3. In the same pot over medium heat, cook the bacon for 3–5 minutes. Add the onion, carrots, and celery. Cook, stirring, until the edges of the onion begin to turn brown, about 6 minutes. Add the garlic and cook, stirring, for about 1 minute. Pour in the wine and stir. Add the chicken broth, tomatoes with their juice, a sprig of thyme, and the beef. Increase the heat and bring to a boil. Once boiling, reduce the heat to low, partially cover the pot with a lid, and simmer until the meat is tender, about 3 hours.

4. Mix the butter and flour in a small bowl until smooth. Remove the thyme sprig from the saucepan. Add the butter mixture to the sauce. Increase the heat to medium and cook, stirring constantly, until the sauce thickens. Sprinkle the dish with chopped parsley and serve.
