
Beef with vegetables and mushrooms
Description
The dish is prepared without unnecessary complications. For a long time, beef with vegetables and mushrooms has been a favorite among home cooks, as it not only has excellent flavor but also turns out very filling and doesn't require any special side dish. The finished dish can be served immediately.

Step 1

Rinse the meat under room-temperature running water, then transfer it to a cutting board and, using a knife, remove any tendons or bones as needed. Next, cut the meat across the grain into medium-sized pieces no more than 1 centimeter thick using the same sharp knife. Now, the meat needs to be well tenderized. To prevent meat juices from splattering around the kitchen, wrap the meat pieces in several layers of plastic wrap and, using a meat mallet, pound them into thin layers.

Using a knife, peel the potatoes and thoroughly rinse them under running water. Dry the potatoes with a paper towel and transfer them to a cutting board. Using a knife, slice the potatoes crosswise into thin pieces so they will bake evenly with the meat and won't burn at the bottom of the baking dish.

Using a knife, peel the onion and rinse it under running water. Then, slice the ingredient into medium rings on a cutting board with a knife and transfer them to a clean plate.

We rinse the mushrooms under running water, then let the water drain off by placing them on a paper towel. Next, on a cutting board, we slice the ingredient into four parts using a knife and transfer them to a clean plate.

For preparing our dish, you can use any hard cheese. Grate the ingredient using a medium grater and immediately transfer the cheese shreds to a separate plate.

Since we are using 72% fat mayonnaise for preparing our dish, it should first be slightly diluted with warm boiled water to reduce its fat content and, at the same time, to make the mayonnaise mixture more liquid so that it can thoroughly soak all the ingredients during baking. This will make the dish juicier and more tender. Take a bowl and pour warm boiled water into it. Using a tablespoon, add the mayonnaise and mix the two ingredients well until smooth and uniform.

Layer all the ingredients one by one into a baking dish. Using a pastry brush, evenly coat the bottom of the dish with vegetable oil, then layer sliced potatoes, meat, onions, and mushrooms in turn. With a tablespoon, evenly spread the mayonnaise mixture over the surface of the top layer, then evenly sprinkle the entire dish with grated cheese. Using oven mitts, place the dish into the oven preheated to 180°C. Bake the beef "à la française" for 35–40 minutes. To check for doneness, use a toothpick: if it easily pierces through the ingredients, especially the meat, the dish is ready. Turn off the oven and let the dish rest for 10 minutes before serving, allowing it to cool slightly.
