1. Cut the meat in three places, but not all the way through—create pockets for the onion.

2. Rub with salt, pepper, and mustard, then let it sit until the pickled onion is ready.

3. To marinate the onions, mix honey and vinegar. Place the chopped onions and herbs into this mixture. Let it sit for half an hour to an hour, then use the onions to fill the "pockets" in the meat, place on top, and wrap the meat in foil.
