
Beef with corn tortillas
Description
The recipe won't take much time. Corn pancakes with pieces of meat and vegetables are a great alternative to usual meat dishes. Serve hot.

1. Heat a large skillet over medium heat, add olive oil and a little adobo sauce. Sear the meat for about 5 minutes on each side, until evenly browned.

2. Chop the onion and finely mince the garlic. Peel and slice the carrots. Pour beef broth over the beef, add sofrito and tomato paste. Transfer to a slow cooker. Add onion, garlic, allspice, and olives to the meat. Cook on low for 10 hours or on high for 6 hours. Add carrots and tomatoes 2 hours before the end of cooking.

3. Prepare corn tortillas. Cut the butter into pieces. Mix flour, salt, and pepper in a large bowl. Add hot milk and honey, stir.

4. Let it stand until the milk is absorbed, 1 to 2 minutes. You should have soft dough.

5. Shape the dough into 12 balls (about 5 cm in diameter) and flatten them between your palms into small buns (about 8 mm thick). If the dough is too sticky, add more flour. Heat 2 tablespoons of oil in a large skillet over medium heat and fry the buns until slightly golden on both sides, about 2–3 minutes per side. Transfer to paper towels to drain excess oil.

6. Serve the flatbreads with beef and vegetables.
