
Beef with potatoes and eggplants
Description
I prepare the vegetables in layers, baking them in the oven. You can safely replace the beef with veal, pork, or poultry. In summer, I add fresh tomatoes, which give juiciness and aroma. At other times, use canned tomatoes. Watch and remember,

1. Cut the eggplants into longitudinal slices about half a centimeter thick. Trim the ends of the vegetables. Arrange them in a single layer on a plate and sprinkle with salt. Let them sit for about 30 minutes so that the liquid is drawn out, taking the bitterness with it.

2. After 30 minutes, rinse the eggplants under water, dry them with paper towels, and place them on a baking sheet lined with parchment paper (lightly greased with oil). Put the baking sheet with eggplants on the upper rack of the oven. Roast the vegetables briefly, turning them, until they are golden brown on both sides.

3. Heat 2 tablespoons of olive oil in a skillet and sauté finely chopped onion until golden, stirring constantly. This will take about 5 minutes. Add the ground beef and cook until browned, stirring frequently. Transfer the meat to paper towels to drain excess fat, then return it to the skillet. Add oregano, cinnamon, both types of pepper, and nutmeg. Stir and cook until the meat is evenly coated with the spices. Pour in the wine and simmer for another minute. Add canned tomatoes, cut into small cubes, sugar, and broth. Simmer over low heat for 30 minutes.

4. Meanwhile, preheat the oven to 180 degrees. Also, peel the potatoes, cut them into medium-thick longitudinal slices, and boil until cooked. Then immediately drain the water and transfer the potatoes to a plate.

5. For basting, beat Greek yogurt with eggs and flour. Add ricotta and feta and beat again.

6. Grease the baking dish with oil. Place the eggplants as the first layer. On top of them, add the meat layer.

7. Next, add the potato layer. Sprinkle it with breadcrumbs.

9. Bake in a preheated oven for 45 minutes. Then let the dish sit for 5–7 minutes to cool slightly, cut into portions, and serve!
