Beef with mustard honey and potatoes
Description
Preheat the oven to 230 degrees. Grease a baking sheet with butter. In a small bowl, mix 2 tablespoons of mustard and ketchup. In a medium bowl, combine beef, egg, breadcrumbs, 1/2 cup of cheese, 1/2 teaspoon of salt, and 1 teaspoon of pepper. Transfer the mixture into a baking pan. Pour 2 tablespoons of honey over the top and sprinkle with the remaining cheese. On the baking sheet, toss potatoes with 1 tablespoon of butter, season with salt and pepper. Place the beef on the upper rack and the potatoes on the lower rack. Bake for 15 to 20 minutes. Remove the meat from the oven and continue baking the potatoes until done, about 5 minutes longer. Meanwhile, in a large bowl, whisk the remaining tablespoon of butter, 1 teaspoon of honey, and vinegar, season with salt and pepper. Toss with salad greens. Serve the beef with potatoes and salad.
