
Beef with blueberries and mushrooms
Description
The dish is easy to prepare without unnecessary complications. Juicy meat with mushrooms and vegetables is always a great choice. Blueberries give the dish a new flavor. Mashed potatoes go well as a side dish. The finished dish can be served at the table.

Step 1

1. Drizzle the beef with olive oil and season well with salt and pepper. Preheat the oven to 135 degrees. Heat a large pot over high heat. Add 2-3 tablespoons of olive oil. Coarsely chop the mushrooms. Mince the garlic. Cut two onions into 4 parts and slice the carrots.

2. When the oil in the pot becomes very hot, add the onion and fry until golden brown. Transfer the cooked onion to a plate. Add the carrots to the same pot and stir in the remaining oil. Fry until golden, about one minute.

3. Add a little olive oil if necessary, then add the mushrooms and garlic. Sauté until the mushrooms begin to darken. Transfer the mushrooms to a plate.

4. Place the meat in a pot and fry for about 1 minute on each side, until browned. Transfer the meat to a plate.

5. Add balsamic vinegar and broth to a saucepan, mix well. Add tomato sauce and blueberries. Bring to a boil, reduce heat, and simmer for about 3–4 minutes. Mash some of the berries with the back of a spoon.

6. Return the meat to the pot, add the onion, mushrooms, and carrots, as well as 3 or 4 sprigs of fresh rosemary and 3 sprigs of fresh thyme.

7. Cover with a lid and place in the oven for 3 hours (for 1.2 kg meat) or 4 hours (for 1.8 kg meat).
